There’s nothing quite like a fresh summer salad to remind you of the simple beauty of seasonal ingredients. For me, a salad full of vibrant fruits and crisp vegetables brings back memories of my childhood in Indiana, where fresh produce was a way of life.

Just recently, I was back in Indiana and drove past countless fruit stands and orchards, including many run by the Amish. The sight of all that fresh corn on the cob, bright red tomatoes, sweet peaches, crisp cucumbers, and colorful peppers was a perfect reminder of the simple, delicious joys of summer.

I grew up near the Amish community, and trips to their farm stands were an almost daily ritual. You’d pull up to a barn stocked full of fresh produce and baked goods, and the whole operation was run on a “trust system.” You’d simply grab what you wanted and leave your cash in a box. It always struck me as such a beautiful testament to the honesty and the sense of community that surrounded their way of life. The Amish are true masters of their craft, putting incredible devotion into every crop they grow. You can taste the hard work and care in every perfectly ripe tomato and every sweet, juicy peach. It’s a level of dedication that makes you appreciate the food on your plate in a whole new way.

This peach and goat cheese salad is my tribute to those memories. It’s a perfect mix of sweet and savory, with the creamy tang of goat cheese balancing the natural sweetness of ripe peaches and the pop of fresh blueberries. The real secret, though, is a bright, herbaceous homemade dressing that elevates every single bite.

This vinaigrette is a perfect harmony of flavors. The tang of Dijon mustard and lemon juice cuts through the richness of the goat cheese, while the fresh thyme and a touch of garlic give it a savory depth. This peach and goat cheese salad is an absolute delight, especially on a hot summer day. Ingredients

  • 2 cups arugula
  • 2 cups spinach leaves
  • 1/2 cup basil leaves, torn
  • 1 peach, chopped
  • 1 cup blueberries
  • 1 cup goat cheese crumbles
  • 1/2 cup toasted almond slices
Salad Dressing
  • 1/2 cup olive oil
  • 2 tbsp. dijon mustard
  • 1/2 lemon, juiced
  • 2 tbsp. garlic powder
  • 1 tbsp. thyme
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. honey

Instructions

  1. Mix the arugula, spinach, fruit, almonds, and goat cheese in a bowl.
  2. Mix together the salad dressing ingredients. Then, pour over the salad and mix everything together (mixing it with your hands is best!).
  3. Serve immediately.
